Our za'atar uses true za'atar herb (origanum syriacum) that is missing from many off-the-shelf mixes. Fragrant and complex, we keep this as a condiment on our table, stirring it into yogurt or labneh, and using it to coat a bite of pita that's been swiped in good olive oil. Works well as an herb-based rub as well or a topper for egg dishes such as shakshuka.
