Remember the first time squeezing into a half-size fridge in a postage stamp kitchen? Time to brine four nice bone-in pork chops? 
Directions: Use 1 tsp of whole spices, a crumble of bay leaf and a flake of chile (only if you want the heat). Heat gently in 1 cup of water shy of boiling, then let it steep for ten  minutes or so. Mix in with: 4 more cups of water, 6 tablespoons of sugar, 3 tablespoons kosher salt, wait until the pool is tepid and everyone in. Bathe for 2 days in the fridge, rinse well and pat dry before cooking (grill, pan fry at moderate heat to keep sugar from burning).
