Hi! I'm Nikki — the baker, the mess-maker, and the person who genuinely believes that the best loaves come from the messiest kitchens.
I started The Daily Mess Bakehouse because baking sourdough changed my life — not in a dramatic way, but in that quiet, grounding way where something just clicks. The rhythm of feeding a starter, shaping a loaf, waiting, watching, and finally pulling something beautiful out of the oven became the anchor of my week.
What started as weekend baking turned into something much bigger. I'm based in Connecticut, and every week I bake fresh, organic sourdough and handcrafted goods for my community — people who care about what goes into their food and appreciate that real bread takes real time.
There's no shortcut in a good sourdough loaf. No instant yeast, no commercial additives, no rush. Just flour, water, salt, and a starter that I've been nurturing for years. That's the whole point.
I've embraced the mess — in baking and in life. Flour on the counter, dough on my hands, the occasional failed loaf that gets eaten for breakfast anyway. That's real baking. And I wouldn't have it any other way.
